VENARI, the future International Centre of Wild Game Gastronomy of Almagro, the first of its kind in the world, is proud to present CIGAG, the First International Congress of Wild Game Gastronomy, which will take place on the 19th and 20th of November at the Palace of the Counts of Valdeparaíso in Almagro, in the province of Ciudad Real. This event will bring together the best Michelin-starred chefs in the world specialising in haute cuisine for game and other leading personalities from this sector.

This meeting, which will be held every two years, is shaping up to be one of the major gastronomic promotion events of VENARI, which is set to become the most important center for the dissemination, research, and advanced training of game cuisine at an international level.

CIGAG, sponsored by the Provincial Council of Ciudad Real and organised by the Asociación Interprofessional de la Carne de Caza, ASICCAZA, has as its primary objective to promote the consumption of game meat both at home and in restaurants and to position it as one of the main pillars of Spanish gastronomy.

Likewise, this congress aims to highlight the value of game meat, a completely sustainable product because it comes from free-range animals and contributes to developing rural areas and conserving nature. In addition, the strict regulatory framework governing hunting activity ensures the population balance of these species in game preserves. In this sense, Ciudad Real is a province where hunting is a powerful driving force for cultural, social, and economic development.

The Palace of Valdeparaíso, today owned by the Provincial Council of Ciudad Real, belonged to the first Count of Valdeparaíso, Don Juan Francisco Gaona, who was Minister of Finance under King Fernando VI. This nobleman restored the building in the 18th century, turning it into one of Almagro’s architectural jewels. It will soon house the world’s first International Centre for Hunting Gastronomy.

The organizer of this symposium is the Interprofessional Association of Game Meat (ASICCAZA). This non-profit association was established in 2009 to represent and defend the common interests of producers and industrialists in the wild game meat sector.
