
The program of this First International Conference on Wild Game Gastronomy, CIGAC, features high-level speakers, including prestigious Spanish and foreign chefs with extensive experience in game cuisine, as well as sommeliers, historians and specialised journalists, among other professionals in this sector.
The workshops, talks and round tables will revolve around recipes for dishes based on big game and small game, new gastronomic trends, food and wine pairing, nutrition and maturation techniques, among other topics. The challenges for the future of wild game cuisine will also be discussed, as well as the need to respect wild game for nature and the countryside.
A jam session will also take place during the congress, with the participation of young chefs who will improvise a collaborative menu with game meat as the main ingredient.
In this first edition of the symposium, an award will be presented to the Zamora-born chef Luis Alberto Lera, one of the world’s leading figures in wild game gastronomy, as well as one of the most vindictive voices of rural cuisine in Spain.

During the event there will be a market place, promoted by the Provincial Council of Ciudad Real, where the most important brands in the sector will be present to showcase their products and novelties. Likewise, attendees will have the opportunity to taste the various culinary proposals that will be offered throughout the congress, as well as enjoying the program of additional activities that have been prepared for the event.
